Hi everyone!

Hope your weekends are going great.I decided to update my blog while my boyfriend is napping

Let’s start out with some scrumptious and filling oatmeal that I started my day with today

I present to you a CC Runner quick, vegan breakfast (you can make it in 1 hour 5 minutes flat)


Coconut-Banana Oatmeal

CC Runner Coconut Oatmeal!

 

 

 

 

 

 

 

 

 

 

 

Ingredients:

  • 1 serving oats (steel cut, regular, or any kind)
  • vegan milk, such as soy, almond, or coconut milk (I used vanilla almond breeze)
  • 2 T coconut butter (I used Artisana)
  • 1 banana
  • 2 T maple syrup or maple agave (or both)
  • cinnamon (I used 1/2 tsp)
  • 1/4 tsp vanilla or maple extract (I used vanilla)
  • dash of salt
  • optional: unsweetened shredded coconut, raisins, chocolate chips, dried pineapple, and other nut-butters

Serves 1.

Directions:

  1. Cook oats and vegan milk together in a microwave for about 2-3 minutes
  2. Stir in coconut butter, maple or agave nectar, cinnamon, vanilla extract, and salt
  3. Serve with a sliced banana and shredded coconut
  4. Add some optional add-ins

My favorite oatmeal includes: oatmeal mixed with some vegan milk, coconut butter, dried pinnapple tidbits, and agave nectar

Mine has been being with my boyfriend and some awesome workouts

My favorite weekend workouts include long runs with some weight training & yoga

This morning was a snow day at my university

I came back inside and had Justin’s chocolate hazelnut spread in a packet spread on bread with an apple

 

 

 

 

 

 

 

 

 

These packets taste just like nutella

Ingredients

 

 

 

 

 

 

 

 

 

 

 

 

 

You can also make your own “Raw Nutella

CC Runner’s Raw Nutella [Vegan]

Serves 1.

Ingredients:

2 T coconut butter

1 T cocoa

2 T agave nectar

Directions:

Heat the coconut butter for 1 minute and then mix with the cocoa and agave.

Spread on muffins, oatmeal, toast, cakes, and more!

Other variations: add vegan chocolate chips, PB, and shredded coconut for a twist of goodness and fun!

Yesterday I bought this natural soap from Whole Foods, Sun and Earth, and it smells like citrus. I find it refreshing and reviving.

Now it’s time to unwind to some tea

Hi Bloggers and Blog readers 🙂


I am so excited for a new semester of my Junior year in college. I had such a great break; sleepovers with my boyfriend, lots of running, and I completed a winter credit for school.


I hate love getting my books organized and ready for a new semester; I am looking forward to meeting some unfamiliar faces and new professors as well. My boyfriend will be visiting never almost every weekend and when he’s not, I’m going to visit him!
Anyway, what you all have been waiting for 🙂

I made a lot of new recipes over winter break. Here’s one that I experimented with and came up with that is guaranteed to make all vegans and non-vegans satisfied:

Vegan & Healthy Chocolate Chip Cookies

Ingredients:

2 1/4 cups WWW flour (As stated in other posts, feel free to use GF flour, such as peanut flour)

1 tsp baking soda

1/4 tsp scant salt

1/3 cup agave nectar OR corn syrup

1/2 cup raw sugar

1/4 cup raw light brown sugar

1/3 cup vegan butter

2 servings egg replacement [or use regular]

1 cup vegan chocolate chips
Directions:

Preheat oven to 375°.
Combine flour, baking soda, and salt. Beat brown sugar, vegan butter, and vanilla extract at medium speed of a mixer until well-blended (about 5 minutes).
Mix egg replacement, granulated sugar, and agave nectar.
Fold brown sugar mixture into the agave mixture. Add flour mixture; stir in chocolate chips.
Bake at 375° for 10 minutes or until golden. Remove, cool, and enjoy!

(FYI: I used King Arthur White Whole Wheat flour for this recipe)
These vegan cookies are lower in calories than the original version with more nutritional benefits. I hope that you try these & like them a lot.

Question of the day: Have you ever been to the Cheesecake Factory? What do you usually order?

Today, after getting settled and unpacked in my dorm room, I went to the Cheesecake Factory with my parents.

I ordered the Chicken Tostado Salad today  to try something new. Most of the time, I order the chicken tortillas. This time, I really liked our waiter and can’t wait to go there again!

Hi Bloggers 🙂 Hope everything is going good! I am enjoying my winter break in NY, and I am looking forward to a new semester next week at my college =)

Right now I am watching my boyfriend kick some ass in hockey!

 

While I’m watching the game, I am also blogging andd going on facebook. Speaking of facebook, has anyone heard that facebook may be shutting down? *Hopefully* that one’s just a rumor!

Hi everyone! HAPPY NEW YEAR!
Questions of the day: What are your new year resolutions? What are you going to do to accomplish these goals?

What did you do for new years eve and Christmas? Did you stay in or go to all different places?
It has been so long since I’ve last updated! SO much has happened over these past 6 months- I have a new boyfriend and we’ve been together for a half year but it feels like forever! I have been keeping up with my running and I did the dance team for my college in Boston. I was in a performance for my school and I did the cross country team there as my third year. Over the summer I worked full time, trained, hung out with my boyfriend daily, and took a summer course. Now that I am on Winter break, I have some time to blog and spend lots of time with my boyfriend, friends, and family.
I am a busy bee being a:

FT college student

FT girlfriend

FT daughter

FT sister

FT runner

The past 2 weeks I have run 50 miles, cross trained a lot, and incorporated strength training and weights. I am going to keep it up in 2011!
